Château George 7 Blanc is made from a majority of Sauvignon Blanc (70%) complemented by 30% Semillon giving it a lovely fruitiness and zestiness balanced by a rounded mouthfeel and added depth from fermentation in barrel on the lees. 

 

Château George 7 Blanc has an elegant nose bursting with aromas of fresh stone fruits & white flowers (orange blossom). On the palate, the oak and lees ageing gives the body some ‘oomph’ and it bursts with flavours of white peaches and pears, citrus fruits (pink grapefruit & candied lemon).

 

The Nitty Gritty

The grapes were harvested right at the start of September in 2020 (the white grapes around here are harvested about a month before the red varieties).  Because white wine making is a different process to red, this was a whole new adventure. We fermented the Sauvignon blanc in new Burgundy barrels especially  bought for the 2020 harvest and the small amount of Semillon in a stainless steel tank. Both were kept on the lees (the remaining yeast after fermentation has finished) for 6 months and we stirred the lees every day for the first few weeks and then weekly until we blended them together, filtered it and bottled it early March 2021. It is just 12.5% alcohol and a level of sulphites less than half of the limit allowed for organic wine (ie under 75mg/l).

    Enjoy this zesty, fruity, elegant white wine on its own as an apéritif and with food in any season. For example in Spring and Summer, it would go perfectly with a fresh prawn Thai salad or grilled asparagus with parmesan. It pairs beautifully with creamy goats cheese too or a salmon fillet.
