Age of Vines: 35 years
Harvest: By hand. Selective sorting according to grape maturity both manual & using the optical sorter.
Fermentation: In 500 litre French oak barrels and stainless steel thermo-regulated vats
Ageing: Matured in 225 litre French oak barrels for 18 months. 30% new and 70% 1-year old oak barrels
Alcohol Volume: 14.5% abv
Low sulphites: <75mg/l (organic limit <100mg/l)
