SQUASH VELOUTE WITH HAZELNUT CRUMBLE TOPPING

What says Autumn more than a smooth pumpkin or butternut squash soup?  Made special here with a nut crumble, Stilton crumbs and your favourite rustic bread. Get out a bottle of George 7 and warm the cockles of your heart and your senses too.  Prince would also be a worthy companion if you are having for a mid-week light supper.

Prep: 20 mins 
Cook: 30 mins

Serves: 6

The blue cheese could be Stilton, Cashel Blue or Fourme d'Alembert to name a few.

Accompany with Château George 7

SOURDOUGH TARTINE OF BABY SALT-CRUSTED VEGGIES 

This is a lovely vegan lunch or potentially a starter if you are looking for a way to cook and present veggies in a slightly different way. The recipe cooks the vegetables in a salt crust which can be used, of course, as a side dish to another meal.

Prep: 20 mins 
Cooking: 40 mins 

Serves: 6 

We have used sourdough to ensure it is a fully vegan recipe, but swap it out for your favourite bread.

Accompany with a glass of  Prince.

CHICKEN ROASTED IN SPICED BUTTER & BRAISED BABY GEM LETTUCE

Roast chicken is a guaranteed pleaser and I am always looking for ways to jazz it up. The chicken and spiced butter combo brings warming flavours as Winter sets in and marries wonderfully with Château George 7. Here we serve it with ‘sucrine’ aka baby gem lettuce and whole garlic cloves cooked slowly with the meat. Yummmm.

Prep: 15 mins 
 Cooking time: 1h45 + 10 mins

Serves: 5-6

When I first came to France, I was amazed to see ‘cooked salad’ for the first time but it just works and is soo French!
