Whipped Feta with Lemon & Thyme

Quick to make and delicious, it has freshness and zing which is complemented by the grilled seasonal vegetables.

Serves: 6 if a small plates dinner, 6-8 for nibbles at apéritif
When it comes to laid-back entertaining, I am always looking for fresh and delicious sharing plates which can be prepped in advance. And this whipped feta really hits the spot. Here I served it with baby sweet onions, roasted courgettes, aubergines and mushrooms and jarred artichokes. Try it and see.
Accompany with Prince de George 7 or Château George 7 Blanc
INGREDIENTS
1x125g tub Greek yogurt
1 150-200g pack feta cheese,broken into small chunks
1 tbsp freshly grated lemon zest
1 tbsp thyme leaves
Drizzle of pomegranate glaze or balsamic glaze
Toasted pine nuts to scatter on top
Black pepper
METHOD
Combine the feta cheese and the Greek yogurt and whip until smooth or use a hand blander
Stir in the lemon zest and the thyme leaves until well-combined.

f the mixture is still dense, add a bit more yogurt or a drizzle of olive oil.
Chill until needed - as simple as that!
To serve: spread a large spoonful into the centre of a platter, drizzle with pomegranate glaze or another sweet syrup such as balsamic, sprinkle with pine nuts and a large twist of black pepper. No need for salt.
Add dipping and scooping vegetables of your choice such as crudités or cooked vegetables such as roasted courgettes, aubergines or jarred artichokes.
Alternatively, spread thickly onto toast, add griddled courgette slices, rocket and a drizzle of honey or balsamic glaze.
