Harvested: Very selective sorting firstly manually and then using an optical sorting machine.  

Fermented: In stainless steel thermo-regulated vats

Aged: Matured for 9 months in French oak barrels

Volume and power without harshness or arrogance, a nice long finish and above all, perfect balance. "
