Harvested early in September 2023 .(White wine grapes around here are harvested about a month before the red varieties).

The free-run juice was put into new and 1 year old Burgundy barrels to ferment. We gently turn the barrels daily to stir up the lees for the first few weeks.

Why Burgundy barrels? They are toasted in a way to bring a touch of  sweetness while Bx barrels are more suited to red varieties for structure and rounding tannins.

The wine  is then left to mature on the lees for 6 months before blending and filtering.

Bottled  on 10th March 2024.

It is just 12.5% alcohol and a level of sulphites less than half of the limit allowed for organic wine (ie under 75mg/l).

So, for Château George 7 Blanc, as for our other wines, we try and suggest some food ideas that are everyday and some that are for more elaborate occasions that you might not think of.

Enjoy this zesty, fruity, elegant white wine on its own as an apéritif and with food in any season. For example in Spring and Summer, it would go perfectly with a fresh prawn Thai salad or grilled asparagus with parmesan. It pairs beautifully with creamy goats cheese too or a salmon fillet.
