“Waves of gentle citrus alongside bright fresh acidities, with sage and peach pit adding depth through the mid palate. This has grip and lift. There is plenty of potential for great white wines on the limestone soils of Fronsac (bottled as Bordeaux Blanc), and this is an enjoyable example. 50% aged in burgundy barrels, with lees stirring, with the other half fermented in concrete egg, again on the lees.”
Harvested early in September 2024 .(White wine grapes around here are harvested about a month before the red varieties).

Half the free-run juice was put into Burgundy barrels and half into a new concrete egg to ferment. We gently turn the barrels daily to stir up the lees for the first few weeks.

Why Burgundy barrels? They are toasted in a way to bring a touch of sweetness while Bx barrels are more suited to red varieties for structure and rounding tannins.

New in 2024, we started using a concrete egg yo bring more complexity and minerality to our white wine especially in hot years. The unique shape of a concrete egg encourages a natural, continuous circulation of the lees during fermentation and ageing.

The wine is then left to mature on the lees in both barrels and egg for 6 months before blending and filtering.

It is 12% alcohol due to the overall mild Summer of 2024. The level of sulphites is well below the limit allowed for organic wine (ie under 150mg/l).

At just 71 kcal per 100ml, this wine is only falls well below the 100-calorie mark for a standard 125ml glass, making it a smart option for health-conscious drinkers. It offers the pleasure of a well-crafted glass of wine, with fewer calories—ideal for those who value balance and mindful enjoyment. And we do!!

Enjoy this zesty, fruity, elegant white wine on its own as an apéritif and with food in any season. For example in Spring and Summer, it would go perfectly with a fresh prawn Thai salad or grilled asparagus with parmesan. It pairs beautifully with creamy goats cheese too or a salmon fillet. So how about a goat's cheese dip or smoked mackerel pâté for those nibbles by the pool or on a picnic?
