Château George 7 2020 is now ready for drinking and how superb it is too!

This wine is 100% Merlot made from 35-year old vines in 3 parcels directly in front of and to the side of the winery.

It has fresh, ripe red fruit flavours - ripe cherry, ripe strawberry and raspberry as well as some black fruits. This fruitiness is complemented by the oak flavours of cedar wood and hints of smoke and spice.

Drink from young ie from for the next 15 years. The best drinking window is likely to be 2024 to 2028.

Harvested on 26th September 2020 by hand, then sorted manually and using an optical sorting machine to get the very best fruit.

Our top grapes go straight into 500-litre French oak barrels. After maceration for a few days, we raise the temperature to start the fermentation.

The huge barrels are turned morning noon and night to gently mix the skins, pips and juice to extract colour and flavours while the wood starts to work on the tannins.

The number of turns varies per vintage (depending on the ripeness and size of the grapes) and on the stage of extraction. And yes, we turn one direction in the morning, the opposite direction at noon and so on.

Once both alcoholic and malolactic fermentation are complete, the wine is then transferred to 225litre barrels (30% new and the rest 1 or 2 year old barrels) to mature for another 15 months.

It was bottled at the end of August 2022.

Suitable for vegans.
So I could just say all the usual - grilled or roast red meats (think roast beef sunday lunch) or steak from the BBQ - but we have gone a step further and got a chef to come up with meat, vegetarian and vegan recipes that pair beautifully with our wines whatever season we are in. Also, I love cooking so have come up with my less-cheffy ideas - how about a rich mushroom risotto, or chicken in a red wine sauce served with root veg mash.....
