Château George 7 2020 & 2021

Harvested by hand, then sorted manually and using an optical sorting machine to get the very best, healthy and ripe fruit.

Our top grapes go straight into 500-litre French oak barrels.  After maceration for a few days, we raise the temperature to start the fermentation.

 The huge barrels are turned morning noon and night to gently mix the skins, pips and juice to extract colour and flavours while the wood starts to work on the tannins.

The number of turns varies per vintage (depending on the ripeness and size of the grapes) and on the stage of extraction. And yes, we turn one direction in the morning, the opposite direction at noon and so on.

Once both alcoholic and malolactic fermentation are complete, the wine is then transferred to 225litre barrels (30% new and the rest 1 or 2 year old barrels) to mature for another 15 months.

The Château George 7 is bottled almost 2 years after it is harvested.

Château George 7 Blanc 2023 & 2024

Harvested in early September, the grapes are sorted carefully to get only the healthiest ripest fruit and then they are pressed. The juice goes directly into Burgundy barrels (new or 1 year old) and the yeast deposits (known as the lees) stay in the barrels which we stir daily for several weeks. The wine then rests on the lees for 6 months until we filter and bottle it in the Spring. The lees and wood bring texture and richness to balance the fresh acidity and fruit.

In 2024 we added a concrete egg to the mix - half of this vintage was fermented in the Burgundy barrels and half in the egg, still on the lees with the egg bringing a touch of minerality to the richness of texture and flavour.

Since its first vintage, Château George 7 Blanc has had 92 or 93 points from the critics every year. It is simply Summer in a Bottle. 

 

 

For the red wines:

I could just say all the usual - grilled or roast red meats (think roast beef sunday lunch) or steak from the BBQ - but we have gone a step further and got a chef to come up with meat, vegetarian and vegan recipes that pair beautifully with our wines whatever season we are in. Also, I love cooking so have come up with my less-cheffy ideas - how about a rich mushroom risotto, or chicken in a red wine sauce served with root veg mash.....

For Château George 7 Blanc, think goat's cheese as part of the aperitif or the cheese course, prawn and mango salad, lightly poached sea bass with citrus flavours. It has richness and length and a bright but not biting acidity making it wonderful for apéro or during meals. A winner all round.
